असंतृप्त वसा अम्लों की हाइड्रोकार्बन श्रृंखला में सिस (cis) द्विबंध मोड़ (kink) पैदा करते हैं, जिससे अणु सघन रूप से नहीं जम पाते। इससे वान डर वाल्स बल घटते हैं और वे कमरे के तापमान पर द्रव रहते हैं।

Cis double bonds put kinks in the hydrocarbon chains of unsaturated fatty acids, so they cannot pack tightly. This reduces van der Waals interactions and keeps them liquid at room temperature.
